Oyakodon

-ingredients- [Serves 1]

  • 150g(5.29 oz) chicken thigh
  • 70g(2.46 oz) onion 1/2 each
  • 2 egg
  • 100ml(3.51 oz) water
  • 2g(0.07 oz) kombu(kelp)
  • 1 tbsp (15 g)(0.52 oz) sake
  • 1 tbsp (18 g)(0.63 oz) mirin
  • 1.5 tbsp (27 g)(0.95 oz) soy sauce
  • 1 tsp (4 g)(0.14 oz) brown sugar
  • 250g(8.81 oz) rice

-Method-

[Chapter 1: Making dashi]

  1. Put 100ml(3.51 oz) of water and 2g(0.07 oz) of kombu [kelp] in a pot and heat on low heat for 30 minutes.

[Chapter 2: Preparation]

  1. 70 g(2.46 oz) onion : Slice into 5 mm(0.19 inch).
  2. 150 g(5.29 oz) chicken thigh : Cut into bite-sized.
  3. 2 egg : Separate the yolks and whites of one egg. Combine the second egg with the yolk of the first egg.

[Chapter 3: Making Oyakodon]

  1. Heat a small frying pan over medium-high heat. *Use a small pan to help control the heating of the eggs.
  2. Grill the chicken thighs skin side down, turning them over when browned. Lightly pan-fry the back side.
  3. Remove the chicken and lightly wipe off the oil from the pan.
  4. Add onion, soup stock, sake, mirin, soy sauce, and brown sugar, bring to a boil, add chicken after boiling, and simmer for 3 minutes.
  5. Turn the chicken over and cook for another 3 minutes.
  6. Taste the sauce to make sure it is seasoned just enough to be a little strong. *Add a little salt if you feel the taste is too light.
  7. Add 1 egg white. When the color changes, mix gently.
  8. Add 1 egg yolk and 1 whole egg mixture and mix lightly.
  9. Place the oyakodon ingredients on top of the rice to complete the dish!
